History of
Cabardes
At the beginning of our era, intense economic activity was
shared in the Cabardès Country between timber from the
chestnut and beech forests of the slopes of the Black
Mountain, the iron and gold mines developed by the Romans
and, of course, the olive-tree and the vine.The Middle
Ages, alongside monastic construction, was a time for
widespread vine plantation. During the XVIIIth century, the
textile industry flourished as did tanneries and mining.
The combination of several activities led to the creation
of small properties alongside larger domaines in the
Cabardes.The quality of Cabardès wines, evoked from the
very start of the XIXe century by the Baron Trouvé, prefect
of the French Empire, has been recognised over the last 10
years by many distinctions and especially by promotion to
the AOC category confirmed in February 1999.

Six rivers irrigate the stony chalk and clay south-facing slopes of the Black Mountain amphitheatre overlooking the medieval city of Carcassonne, which is the heart of the Cabardes.
The Cabardès vineyards on the hillsides above the Fresquel and Trapel valleys are lined with white limestone which stores the heat of the day. Higher up the Montagne Noire slopes, granite outcrops are followed by schist and gneiss.
Dominant east and west winds found in the Cabardes characterise the duality of climatic effects, soft, cool influences from the Atlantic alternating with the heat of the Mediterranean. Altitudes range from 100 to 350m.
40 % minimum of Atlantic vine types : Merlot, Cabernet-Sauvignon, Cabernet Franc, 40 % minimum of Mediterranean varieties : Syrah, Grenache20 % maximum of Cot, Fer Servadou and Cinsaut.
Red: Smooth, rich and concentration wines. Long vinifications are followed in the spring by the complex task of blending wines to reach the best possible harmony.

Built under the reign of Louis XIII, this
magnificent Château in the Cabardes is located in the heart
of the village of Pennautier. The vineyards grow on the
sunny,rocky slopes of the Montagne Noire. From here the
views on the Pyrenees to the south, the Massif Central to
the North and Carcassonne are breathtaking.
